Creamy Chicken, Rice and Veggie Soup - Perfect Comfort Food!
This soup is one of my all-time favourites for so many reasons, so let me introduce you to my old friend, the humble chicken soup.
I’m not going to wax poetic about this soup because I hate nothing more than scrolling through endless paragraphs detailing a person’s entire life story before they tell you how to actually MAKE the delicious food.
Here’s the key details: This takes about half an hour to make. One pot, dump everything in and you barely have to check it. It’s super hard to stuff up, super comforting and excellent meal prep as it also freezes well.
The recipe makes a whopping 10-11 serves so feel free to halve it.
Ingredients
dash of olive oil
1 brown onion, diced
2-3 cloves of garlic/tsp minced garlic (or more, I’m not your mother)
8-10 cups chicken/vegetable stock (or water and stock powder)
frozen mixed veggies
1 cup rice, rinsed (brown or white, whatever you have)
500g chicken breast
1 tsp dried basil
1 tsp dried parsley
1 tsp dried oregano
salt & pepper
1 cup evaporated milk
Method
Put a big soup pot on medium heat and add a dash of oil. Once the oil is warm add onion and garlic and sauté until garlic is fragrant and onion is soft.
Add 8 cups of stock to the pot, along with a good amount of mixed veggies (I eyeball this but it’s usually about half the bag). Give it a stir.
Add the seasonings as well as the chicken breast, give a stir and bring to the boil (pop the lid on, it’ll boil faster!).
Turn down to a simmer and leave for 15 minutes.
Give a stir and leave on for a further 15 minutes.
Turn off the heat. At this point you may need to add some more liquid depending on how your rice has cooked. If that’s the case, add the extra 2 cups of stock.
Remove the chicken breast and shred. If you have a stand mixer or electric hand mixer, you can use this and a bowl to make the process much faster, or you can just use two forks.
Add the chicken back in to the soup along with the cup of evaporated soup. Stir well to combine and you’re done!
As I said before, this soup freezes really well. It’s super comforting and filling as well, so it works as a lunch or dinner.
