The weather has settled in to being cold all the time and I am in full soup mode! I hear a lot about people’s lives calming and quieting down over the winter period but somehow, our winters never seem to be fairly busy!

As such, I looked ahead for the next few months and when our usual monthly grocery shop would be falling and realised I needed to re-jig things a little. One of the reasons I love grocery shopping monthly is that it helps us handle busy seasons without having to worry about what we’re eating.
So, this meal plan is a slightly smaller one - 3 weeks worth instead of the usual 4 or 5!
If you’re new here, we like to keep cooking simple! We cook every second night and have the leftovers on the nights in between. For lunches, we pick one thing and meal prep it for all the weekdays - this saves us money too! Then on the weekends we just scrounge or have things like toasted cheese sandwiches.
Lunches:
Pumpkin soup (recipe coming soon)
Minestrone soup (recipe coming soon)
Healthy Mac & cheese bakes
Dinners:
An altered version of Jamie Oliver’s Chicken & Leek Stroganoff - if you have my Notion Meal Planning Template you can grab my altered recipe there, as well as a lot of the other meals I make!
Pot Roast - leftover from last month’s meal plan… again
Ravioli
Tuna Mornay (trying a recipe from a relative this month, I’ll keep you updated if it works)
Thai Red Curry Noodles
I definitely was feeling the pull for some new meals as I was constructing this meal plan, so I think over the next month I’ll be making it a mission to find some new delicious sounding meal ideas to add to our rotation. If you’ve got any favourites, let me know!
Until next month, eat well my friends!
