Somehow, we’ve gotten into a rhythm of the meal plan changing in the middle of the month, which isn’t my favourite and is something I probably need to work on remedying at some point. It was helpful for the Christmas/New Year period (because who wants to be in the shops right at New Years) but now it’s kind of making planning a bit wonky.
Nonetheless, here’s March’s meal plan! I’m a little late getting this up because my mother’s been in hospital, we actually did the grocery shop for this meal plan on the 14th. I’m keeping things VERY simple this month, which has had the added side effect of keeping the shop really cheap, which is amazing.
A refresher in case you’re new here - we cook every second evening and half leftovers on the alternating nights! We find this makes things a little easier mid week. We plan one lunch for the week and meal prep that on the weekends, and we usually end up with some overflow leftovers for that so we usually have something else we can have once or twice during the week if we’re wanting some variety.
Now, let’s get on to the meals!
Lunches:
Chicken Salad on bagels (no recipe for this yet… I should upload one!)
TBD - I admit, I lost a bit of steam with lunches at this point and decided to let future Steph deal with it. Anyone else find lunch a complete pain in the butt?
Dinners:
Spaghetti Bolognese
Chicken & Peanut Noodles (my own recipe, I need to post this one here too)
Roast Chicken
Tuna Sushi Bowls
Peach Chicken (Also need to post a recipe for this, and this is a carry over from last month’s meal plan)
Even looking at this meal plan has me breathing a sigh of relief at how simple it is! Sometimes you’ve just got to go back to basics. I hope you’re having a great March - can you believe it’s already almost April?
