Somehow last month I ended up with SO MANY cream-related recipes? They were delicious but it was way too much for my sensitive digestive system so I’ve specifically avoided them this month, trying to veer away from creamy pasta dishes a bit.
I pushed this meal plan out a little too, with a fortnightly grocery shop between this meal plan and the last so that the next meal plan will cover the busy couple of weeks before and after Christmas so we can avoid the shops!
Without further ado, here’s the plan:
Lunches:
Chicken mango bacon salad - an idea born of a memory, I’ll report back if it’s good!
Crumbed Chicken, Quinoa & Cranberry Salad (a recreation of a salad I used to get at Schnitz)
Tuscan Chicken Bakes - I plan to sub the cream with Greek yoghurt for more protein
Dinners
A lot of easy/low effort meals in the list this month, ya girl is TIRED.
Quiche w pumpkin - my own recipe
Peach chicken - like apricot chicken but better!
Thai red curry noodles - loosely based on a hello fresh recipe we got years ago
Paprika chicken - an instant pot goodie
Porcupine meatballs - sub ‘tomato sauce’ for a can of condensed tomato soup plus water
Sausages + bubble & squeak - this feels like cheating because there’s no real cooking involved, but the Aldi bubble & squeak are excellent!
Chicken kiev, chips & veg - another ‘cheat’ meal
Beef Pot Roast - never made one of these before! I plan to buy 1kg of meat and half it for 2 seperate meals
Sushi bowl - another really easy one, but I’ll cook the rice myself
Burgers/burger bowl
We’ll also be hosting Friendmas at some point this month too which will be fun so we may have quite a few leftovers nights from that, we shall see!
